Great for Christmas and New Year’s Eve, the rise with salmon and gorgonzola will amaze you with its delicate flavor.
You will need only a few ingredients to prepare the rise with salmon and gorgonzola as well as being a quick first course.
The combination salmon and gorgonzola is winning, but I also wanted to add some chopped walnut and the result has been a success.
INGREDIENTS FOR 4 PEOPLE OF RISE WITH SALMON AND GORGONZOLA:
- 320 gr. of Carnaroli rice
- 150 gr. of smoked salmon
- 100 gr. of gorgonzola cheese
- 1 tablespoon of roughly chopped nuts
- 1 shallot
- butter to taste
- extra virgin olive oil to taste
- vegetable broth to taste
- salt to taste
- pepper to taste
- fresh chopped parsley to taste
Start by cleaning the shallot and chopping it finely with the help of a mixer.
Then take a pan, add a knob of butter, a tablespoon of extra virgin olive oil and add the shallot making it brown over low heat.
When it take a golden colour, you can pour the rice and toast it for a few minutes without stopping stirring.
Now you can start cooking, adding salt and pepper to taste and adding the stock a little at a time so that the rice can cook.
Meanwhile cut the smoked salmon into strips and the gorgonzola into small cubes.
After about 5 minutes you can add salmon, gorgonzola and walnuts.
With a wooden spoon mix well until the cheese has melted completely giving the rice a good creaminess.
Now you can serve the risotto by pouring fresh parsley over each plate.
