Meat sauce with pressure cooker

Today we prepare meat sauce together in a pressure cooker, a super easy recipe, delicious and above all quick to make.

I had never tried to make meat sauce with a pressure cooker and I was pleasantly surprised! The flavor is super good!

Meat sauce is excellent not only for flavoring pasta in various formats but as we all know it is used to prepare lasagna, crepes, etc.

In traditional cuisine, meat sauce can be enriched with the addition of sausage to make it even tastier but above all it suggests cooking the sauce for a long time (3-4 hours) and in plenty of olive oil.

INGREDIENTS FOR 4 PEOPLE OF MEAT SAUCE WITH A PRESSURE COOKER:

  • Kg. 0, 200 of minced pork
  • Kg. 0, 200 of minced veal
  • extra virgin olive oil q.b.
  • 1 sprig of rosemary
  • 1 carrot
  • 1 celery
  • 1 onion
  • 1/2 glass of red wine
  • 400 g. of meat broth
  • Salt to taste.
  • nutmeg to taste
  • 600 g. of tomato puree

PREPARATION

First clean the vegetables and then put them to mince in a mixer.

Then pour 4 tablespoons of oil into the pressure cooker and brown the chopped vegetables together with a sprig of rosemary (which you will then remove after a few minutes) for 6-7 minutes over moderate heat, stirring often.

Now you can add the minced meat and brown it for a few minutes, stirring frequently.

Now pour the red wine, the tomato puree and the broth (the liquids must not evaporate).

Season with salt, nutmeg, close with the lid and raise the flame of the stove to the maximum.

When the valve starts to whistle, lower the flame and calculate a cooking time of 25 minutes.

Once the cooking time has elapsed, carefully vent the valve well so that the red piston goes down and open the lid.
