Homemade Italian pizza

Preparing homemade Italian pizza is not that trivial.

To prepare an excellent homemade italian pizza it is really necessary to use the right ingredients, respect the doses and work the dough a lot.

I personally use 00 weak flour with which I always get excellent results and I digest better.


  • 700 gr. of flour 00
  • 15 gr. of fresh yeast
  • 2 teaspoons of sugar
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of salt
  • About 2 glasses of warm water
  • 4 cheese (mozzarella)
  • tomato puree appropriate
  • oregano appropriate
  • extra virgin olive oil appropriate


Start by dissolving the fresch yeast crumbled in a coffee cup with a little warm water.

Then, inside the mixer or a container, pour the flour, the dissolved yeast, the two teaspoons of sugar, the oil and two glasses of water.

If necessary, add a little water if the dough is dry.

Knead by hand or with a mixer for 5-8 minutes, then at the last moment add the salt and continue to work for another minute.

You will need to obtain a smooth and homogeneous dough that does not stick to your hands.

Now, put the pasta to rest in a container for 5 ore 6 hours, in a warm area, away from drafts and covered with a cloth or a wool blanket.

When the dough has risen, turn on the oven to 200 ° C. ventilated mode.

So, take the baking pans needed for the pizza, grease them with oil, then place the dough in the center..oiling the baking pan

Now, you can start rolling the dough by hand directly into the pan.

However, if you like to eat a thin and crunchy pizza, roll out the dough with a rolling pin.

Now you can season the dough with the tomato puree, salt, oregano and a drizzle of oil

You can seas pizza except mozzarella or other cheese.

When the oven has reached the right temperature, place the pan on the lower part of the oven for a few minutes to ensure that the base of the pizza becomes crisp.

Then, you move the pan also on the central part of oven.

At the end of cooking, remove the pizza from the oven and add pieces of mozzarella on the surface.

The average cooking of the pizza is around 10-15 minutes but a lot depends on the type of oven you have.

Once the pizza is ready, take out of the oven, cut and serve into pieces .
