Croquettes of fast potatoes

Croquettes of fast potatoes can be both a single dish and a very tasty main courses especially for the kids.

To prepare the potato croquettes I used a few ingredients, potatoes, stale bread and herbs.

The croquettes, in fact, can be filled with diced ham or with diced cheese, the choice is yours!

As for cooking, the croquettes can be made either fried or cooked in the oven or simply cooked in a pan in very little oil.

INGREDIENTS FOR 4 PEOPLE OF CROQUETTES OF FAST POTATOES:

  • 500 gr. of yellow potatoes
  • 250 gr. of stale bread
  • aromatic herbs choose between parsley, thyme to taste
  • 1 garlic ( optional )
  • salt to taste
  • pepper to taste
  • 1 egg
  • oil for frying to taste

PREPARATION

Peel the potatoes and steam cook them for 30 minutes or boil them in plenty of cold water for as long as necessary.

In the meantime, cut the stale bread, put them in a food processor together with the garlic clove (optional) and the aromatic herbs you prefer and once everything has been chopped, put it aside.

Chop and set aside, in the meantime when the potatoes are cooked, drain them from the water and let them cool in a bowl.

Once cold, add the potatoes to the food processor together with the egg, season with salt and pepper and chop.

Now you can add the flavored bread ( not all because a part will serve to make the breading ) little by little until the potatoes have taken a semi-soft consistency.

Now wet your hands, take the mixture little by little and shape it into a croquette, if you want to fill it with cheese or ham.

COOKING IN OIL

Then, pass each croquette on the remaining bread flavored for the final breading and fry in oil abounds on both sides.

COOKING IN THE OVEN

For cooking in the oven, however, place the croquettes on a baking tray covered with parchment paper and brush their surface with olive oil.

Bake in a hot oven at 180°C. ventilated mode for about 20 minutes turning the croquettes on the other side as well, they will be ready when they have a golden surface.

COOKING ON THE STOVE

For cooking in the stove, take a pan and grease it with a little olive oil, put it on a moderate heat and add the croquettes a little at a time, turning them on both sides until they are golden brown.

Serve the croquettes alone or with a side dish of salad.
