Salmon fillet in the oven with potatoes

Here is a simple and delicate recipe, how to prepare a tasty salmon fillet in the oven with potatoes.

The simplicity and ease of preparing salmon fillet in the oven with potatoes makes this fish-based second course attractive for both adults and children.

If you want to make this dish lighter, you can replace the mascarpone with light philadephia.

INGREDIENTS FOR 4 PEOPLE OF SALMON FILLET IN THE OVEN WITH POTATOES:

  • 600 g. of fresh salmon fillet
  • 6 potatoes
  • 400 g. of leeks
  • fresh parsley to taste
  • 150 g. of mascarpone
  • Salt to taste.
  • pepper as needed.
  • extra virgin olive oil to taste

PREPARATION

Take the leeks eliminate the outer leaves, the green part and rinsed under water.

Start cutting the leek into rather fine slices and set aside.

Take a non-stick frying pan and pour two tablespoons of extra virgin olive oil, add the chopped leek and cook for a few minutes on a moderate heat, adding a little water when necessary.

When the leeks will cook, add the mascarpone, chopped parsley, salt and pepper with a wooden spoon, stir and continue to cook for another 3 minutes over low heat, then set aside.

Turn on the oven at 200 C° in ventilated mode, when it has reached the temperature, put the potatoes in the oven that you have prepared in a pan, together with a few tablespoons of oil and a few sprigs of rosemary.

After about 30 minutes, take a parchment paper, cover it with the leek and mascarpone sauce and place the salmon fillets on top, seasoning them with salt and pepper.

Cover with the parchment paper as a foil and put the fish to cook in a pan for about 30 minutes.

Consider that it takes about 40-50 minutes to cook the potatoes.

Once the fish is cooked, serve with a side dish of roasted potatoes.
