The Compote Tropea’s onions is a tasty recipe to be prepared in the summer, where this type of onion is easily available.
Excellent spread on croutons, the Compote Tropea’s onions is combined in a sublime way with cheeses, especially the most seasoned and tasty and with roasted meat.
If you have trouble finding the onion of Tropea you can use a particularly tasty type.
INGREDIENTS FOR 3-4 JARS OF GR. ABOUT 200 FOR COMPOTE TROPEA’S ONIONS:
- 1 kg of Tropea Onions
- extra virgin olive oil to taste
- Salt to taste.
- 3 bay leaves
- 200 gr. of granulated sugar
- 85 g. Brown sugar
- 100 gr. of balsamic vinegar
- 4 glass jars of about 200 gr. with lid
First sterilize the glass jars with lids by boiling them for 10 minutes in boiling water or proceed with washing them in the dishwasher by placing them upside down.
Drain and let them cool and dry on a clean cutlery upside down.
In the meantime, take the onions, remove the peel with a knife and cut them into thin slices.
Let them soak for two hours in a container with water to sweeten the flavor.
Then take a pan and pour about two tablespoons of extra virgin olive oil, heat for a few seconds and add the onions.
Now start cooking for about 20 minutes over moderate heat, covering with a lid, stirring often.
Now you can add brown sugar, granulated sugar, half a teaspoon of salt and the bay leaves.
After about 5 minutes pour the balsamic vinegar, cover with lid letting some air pass and lowering the heat calculated a cooking of about 30 – 40 minutes.
As soon as the mixture starts to caramelize it will be time to turn off the stove and pot.
Fill the jars with the compost leaving 1 cm. from the edge, screw with the lids and move to the phase of pasteurization.
Then, immerse the jars completely in cold water and bring everything to a boil.
For pasteurization calculate 30 minutes from when the water starts to boil, then turn off the heat and let the jars cool inside the pot itself.
Take the jars, put them upside down and then check that they have done the vacuum packed, no click in the center of the lid and store in the pantry for 1 year.
