The anti-waste recipe that I propose to you today concerns stale bread that we will use to prepare Appetizer of fish and land

Appetizer of fish and land can also become a delicate single dish, especially in autumn and spring.

An excellent easy recipe, quick to prepare and good to taste.


  • 700 g. of already cooked cannellini beans
  • 24 mussels already cleaned (even frozen are fine)
  • 1 clove of garlic
  • fresh oregano to taste
  • fennel seeds
  • stale bread to taste
  • extra virgin olive oil to taste
  • Salt to taste.


First you will have to start with the preparation of the mussels, buying frozen ones gives you the opportunity to save time and be safe in their cleanliness and freshness.

So, take the mussels, rinse them well under running water and then put them in an already hot pot with a lid over moderate heat.

It will take a few minutes for the mussels to open, then remove them from the heat and let them rest on one side.

Meanwhile, take the bread and remove the crust, cut it into cubes and then put it in a pan to brown with a couple of tablespoons of oil, a clove of garlic and plenty of oregano and a pinch of salt until they are golden brown .

Then take a saucepan, pour a couple of tablespoons of fennel seeds, a little oil and add the drained beans of their liquid, flavoring them for a few minutes with a pinch of salt.

Now pour the beans into a food processor and reduce it to a puree, this will be the basis of our dish or you will first pour a part of the cream of beans and then add a part of the mussels without their shells together with the morsels of fried bread.

Very important! Conclude by pouring over a drizzle of oil, better if you use the one in which you browned the bread morsels, you will smell what a scent!.
