Fried bread balls with vegetables

An excellent recipe to try to recycle the bread of a few days before concerns fried bread balls with vegetables.

Fried bread balls with vegetables represent an empty fridge, because you can prepare them with all those vegetables that you have in the refrigerator and that you may not know how to dispose of.

I used corn, peppers and tomatoes, but they are also excellent with courgettes, aubergines, carrots, so give vent to what you have in the fridge.

If you don’t want to fry you can always prepare a hamburger-like dough and cook it in a pan with a drizzle of oil.

The fundamental thing is to flavor the dough well, the hot sauce can’t be missing in my opinion!

INGREDIENTS FOR 4 PEOPLE:

  • 300-400 g. of stale bread for a couple of days
  • 1 small onion
  • milk to taste
  • 1/2 red pepper
  • Salt to taste.
  • 1 teaspoon hot sauce
  • 1/2 teaspoon chili powder
  • 4 tablespoons cooked corn (optional)
  • 3 red tomatoes
  • 2 tablespoons of grated cheese
  • 4 tablespoons of 00 flour
  • 2 tablespoons cornmeal
  • peanut oil to taste to fry

PREPARATION

First, clean and wash the vegetables, cut the onion, pepper and tomatoes into cubes and set them aside.

Cut the bread into 1 cm thick slices. remove the crust and place them in a food processor together with a few drops of milk to soften them.

Then work with your hands and once you have obtained a rather soft dough, fill a pan with plenty of seed oil.

Prepare the not so big meatballs, the size of a walnut will be enough, first wetting your hands with the oil.

When it has reached temperature, start dipping the meatballs a little at a time to prevent the temperature of the oil from lowering.

Once cooked, drain the bread balls on absorbent paper and serve.
